The tarallo is not just a baked product, but an identity symbol linking Puglia to the dynamics of the Mediterranean diet and the local economy. However, in Palo del Colle, as in many traditional production districts, the challenge is to transform an artisanal excellence into a structured supply-chain model. In an era of food standardization, there is a need to rediscover “Meridian thinking”: a vision that places at its core slowness, the quality of raw materials, and a deep connection with the community, in order to resist the extractive logics of the global market.
Rural Hack collaborates in the project by facilitating the creation of a permanent laboratory connecting producers, citizens, and innovators. The aim is to map and strengthen the tarallo supply chain, promoting the use of local grains and sustainable techniques that enhance the authenticity of the product. Through workshops and co-design activities, the project seeks to regenerate the social and productive fabric of Palo del Colle, transforming tradition into a driver of modern, inclusive economic development that remains rooted in its origins.
